I've been doin' MF runs with my Zon and have built up about 220% worth of gear. If I were to make a dedicated MF character what would be best ?
Sorc due to her reliance on skills as opposed to gear ?
Barb, due to his Find Item skill and passives which reduce need for gear ?
The necro ?
LOL :D
Thoughts...

For survivability I go for Sorc. Just like you said, her skills save her above gear.
Barbs are probably the best though for all the specialty stuff they have for MFing.
Leap to jump the mephisto moat. Because he can dual weild and use 2 ali baba MF swords he can get the highest MF % of any class. Iron Skin and Natural Resistance can help bridge the gap in lacking defense and resists. The battle cry that fricken doubles life mana and stamina... all that and find item gives double the chance to find items on corpses. Hard to beat :)
EDIT: The reason I hate barbs are all the one hit kills in Hell mode. Stupid dolls in Durance... *Pop* DAED!!

gotta say the sorc also
Ive currently got a lvl 75 zon I MF with at 310% mf
just remade my sorc though so she can use most the items, and gonna put that ali baba in her hand when she does mfing.. so she will have an added mf% then the zon could have :D

barbs are pretty good at MF.... :P
Altho i do agree on those damn dolls!
So (barring the excellent uniques) is MF best achieved by socketing perfect topaz? I've saved a few of the things and I've been looking for 2 or 3 socketed helms + armor for them. Is that a good plan or a bad plan?

P.Topaz are great for raising MF %.
3 in a helm = 72%
4 in armor = 96%
That puts you at 168% before you even start on the jewelry...

Word. It's the best way to start, thats for sure. Act 3 shop / merc lady often has MF gloves and boots. From there you just add it as you find it.
A good MF rig would look something like thius...
Helm: Tarnhelm, Steelskull or Harlequin Crest
Armor: Skullders Ire or Wealth Runeword
use Larzuk to socket P Topaz into these to boost them even more
Sheild: Rhyme Runeword
Gloves: Chance Guard
Belt: Goldwrap or Tal Rashas Fine Spun Cloth
Boots: War Travelers (good luck)
Weapon: Varies by class obviously. Sorc is Occulus, Barb is two Ali Baba's.
Rings: various rings. Finding MF + resist rings is the way to be, although Nagelrings do come in a 30% variety (if your lucky) which is higher than I've ever seen on any other ring.
Ammy: same. not sure if there is a specialty MF ammy or not.

I vote Barbs. Seeing as I have a mf barb, and am building an MF sorc right now, I've been playing aroudn a lot with both builds right now. I have been doing HM memph runs with my barb at about 500% MF currently. I highly recommend using your merc to help with MF if you are a barb...being able to add on an extra ~150% worth of MF is worth its weight in gold.
Id have to say Barbs.. 2 Ali Babas are quite nice for teh MF!

I say barb as well unless you have the uber mf equipment like shako and war travelers. Having done countless mf runs with zons, sorcs, and barbs, I've found that doing meph runs with a barb with a good damage sword/leech is by far the best. Whack 'me with your dmg sword a few times and switch to the baba's.
My merc isn't so hot right now so... I'm going to switch to a holy freeze merc with an amn spire of honor, gemmed mail, and steelskull with 50% mf.
