I've just not messed around with this yet - how do you get a pet to learn abilities, and then how do you teach said abilities to other pets?

Go to a pet trainer AFAIK.

You can also learn new tricks from different pets. Higher level bears for example come with the claw ability. Stable your pet, tame a bear with claw, and then you can train your current pet with it.
