I'd hate to end up being like everyone else, or are there an equal amount of each one in the game?
Night Elf Hunter and Undead Rogue are really common.

Hunters are pretty common ... BUT thats because it makes the best PvE solo force you can ever have. If you think your going to do a lot of soloinng, hunter is the way to go.

Most blacksmiths go weapon, so if you go armor you should have a lot of potential clients

Theres a reason most smiths go Weapons, I learned the hard way, Armorsmithing suxors compared to Weaponsmithing :P. When the time comes late in the game Scottg make sure you choose Weaponsmithing :P more profitable and more plans ATM
The best profession hands down is Engineering. Mining supports it, you need some leather too though.

Alchemy is a good skill as well, if you want to do it, do it :) (Everyone needs potions). I do Skinning/Dragonscale Leatherworking, it's practically completely useless (Skinning does make me money though).

alchemy is not only useful but pretty simple. almost all of the potions are Herb 1 + herb2 + vial = potion
